Potato Salad

6-8 medium potatoes
¼ C. or less finely chopped onion
2 medium dill pickles, finely chopped
6 boiled eggs, chopped
Mayonnaise, diluted with a little bit of pickle juice.
Salt & pepper.

Oriental Cabbage Salad

1 lg. head cabbage, chopped
2 chicken breasts, cooked & chopped (opt.)
1 bunch green onions, chopped

On a cookie sheet, place:
2 pkgs. Oriental ramen noodles, crushed
¼ C. sesame seeds
¼ C. slivered almonds
Toast in oven at 400° about 4 min. until light brown.

In blender:
¾ C. canola oil
3 T. soy sauce
2 T. white vinegar
½ t. pepper
2 seasoning packets from ramen noodles
Blend until well combined.

Combine all ingredients & mix well.

Sour Cream Potatoes

Boil 9 medium potatoes; peel & cut up. Salt & pepper. Make a gravy with 2 can cream of chicken soup in 1 cube melted margarine. Add 1 chopped onion to this. Remove from heat & add 1 pint sour cream. Take 9x13 pan & place a layer of potatoes, a layer of gravy & a layer of grated cheese, making 2 layers of each, ending with cheese on top. Bake at 375° for 30 minutes or until heated through.

Perfect Roast

Place a 2-3 lb. roast in a covered pot. Bake at 425° for 30 minutes. Turn oven to 200° & cook 5 hours. Slice & make brown gravy from trimmings. Reheat together at 300° for another hour. Serve.

Macaroni & Cheese

1 ½ C. medium elbow macaroni
2 T. butter
2 T. flour
1 ½ C. (or more) grated cheddar cheese
A little chopped onion
2 C. milk
Salt & pepper

Boil macaroni until fairly tender; drain. While macaroni is boiling make sauce. Melt butter & stir in flour until smooth. Add milk & heat to make a sort of gravy. Add cheese & onion. Add cooked macaroni. If you want to add more cheese, slice it & add to the top.

Meat Loaf

2 eggs, beaten
1 ½ lbs. ground beef
½ lb. ground pork
2 C. soft bread crumbs
¾ C. minced onion
¼ C. minced green pepper
2 T. bottled horseradish
1 T. salt
¼ C. milk
¼ C. ketchup
1 t. dry mustard

Add eggs to meat; blend lightly with fork. Add remaining ingredients; mix thoroughly but do not stir more than necessary as it tends to toughen loaf. Shape into an oval loaf; place in shallow pan. Bake 1 hour at 400°. Six servings.

This is my favorite meat loaf recipe. Sometimes I add a little sage.
